Who Needs Food Manager Certification in Oklahoma?

Oklahoma’s state rules make a Certified Food Protection Manager (CFPM) optional, but the Oklahoma City and Tulsa health departments require one in their cities. Statewide, certification is one way the person in charge meets the knowledge requirement.

State Rules

  • Under Oklahoma’s food establishment rules, at least one person may be a certified food protection manager who passed a test that is part of an accredited program.
  • At inspection, the person in charge must demonstrate food safety knowledge. Being a CFPM is one of three ways to do it.
  • The other two options are having no priority violations or correctly answering the inspector’s questions.

Local requirements

Oklahoma City & Tulsa Areas

  • Oklahoma City-County: establishments serving unpackaged TCS food in Oklahoma City, Del City, Midwest City, Nichols Hills, Spencer, Harrah, The Village and Warr Acres need at least one on-site certified manager who is a person in charge. Exams must be ANSI-CFP accredited.
  • Tulsa County: manager certificate registration with the Tulsa Health Department is required in Tulsa, Bixby, Broken Arrow and Sand Springs. After passing, register in person with photo ID. The fee is $25.

Oklahoma Food Manager Certification FAQs

Is food manager certification required in Oklahoma?

Not statewide. Oklahoma’s rules say at least one person may be a certified food protection manager. However, the Oklahoma City-County Health Department and the Tulsa Health Department require certified managers in the cities they serve.

Which Oklahoma City-area cities require a certified manager?

Oklahoma City, Del City, Midwest City, Nichols Hills, Spencer, Harrah, The Village and Warr Acres. Establishments that prepare, handle or serve unpackaged TCS food must have at least one on-site certified food protection manager who is a person in charge.

Which establishments are exempt in Oklahoma City-County?

Temporary food facilities, prepackaged ice cream trucks, farmers’ market vendors, produce stands selling only uncut produce, and facilities selling only commercially prepared prepackaged food are exempt. Their employees must still demonstrate adequate food safety knowledge.

What does Tulsa require?

Tulsa Health Department manager certificate registration is required in Tulsa, Bixby, Broken Arrow and Sand Springs. After completing an ANSI-accredited program, register your certificate in person at the Tulsa Health Department with photo ID. The fee is $25 and the Tulsa certificate expires five years from issuance.

How does certification help outside Oklahoma City and Tulsa?

Statewide, the person in charge must demonstrate food safety knowledge at inspection. Being a certified food protection manager is one of the three ways to meet that requirement under OAC 310:257-3-2.

Is the Always Food Safe certification accepted in Oklahoma?

Yes. Oklahoma and the Oklahoma City and Tulsa health departments accept ANSI-CFP accredited food protection manager exams. The Always Food Safe Food Protection Manager exam is accredited by the ANSI National Accreditation Board (ANAB).

Can I take the Oklahoma food manager exam online?

Yes. The exam is taken online with a remote proctor from your home or office. No scheduling is required. You need a laptop, desktop or Chromebook with a webcam and microphone, a government-issued photo ID and a private room.

How long is the certificate valid?

The Always Food Safe Food Protection Manager certificate is valid for five years. Oklahoma City-County also recognizes certification for five years from the exam date.

Is this certification equivalent to ServSafe?

Yes. Both the Always Food Safe and ServSafe food manager exams are ANAB accredited under Conference for Food Protection standards, which is what Oklahoma City and Tulsa require.
