Who Needs Food Manager Certification in Idaho?

Idaho’s Food Code (IDAPA 16.02.19) is administered by the Idaho Department of Health and Welfare (IDHW) and enforced by Idaho’s seven public health districts. Central District Health puts it simply: Idaho requires food establishments to have at least one certified food manager on staff.

The CFPM Requirement

  • Beginning July 1, 2018, at least one employee with supervisory and management responsibility, and authority over food preparation and service, must be a Certified Food Protection Manager.
  • The CFPM must pass a proctored exam that is part of an accredited program.
  • The CFPM does not have to be on site at all times, but must have supervisory authority and train the person in charge and other employees.

Accepted Certification

  • Eastern Idaho Public Health lists Always Food Safe among accepted nationally accredited CFPM exams and requires proof of certification before a pre-opening inspection.
  • Keep the certificate, or a copy, at the establishment. Regional managers should keep a copy at each location they oversee.
  • Low-risk establishments that offer only factory-sealed, non-TCS foods are exempt from the Idaho Food Code rules.

Idaho Food Manager Certification FAQs

Is food manager certification required in Idaho?

Yes. Under Idaho Food Code section 2-102.12, beginning July 1, 2018, at least one employee with supervisory and management responsibility must be a certified food protection manager who passed a test that is part of an accredited program.

Does the certified manager have to be on site at all times?

No. IDHW guidelines say the CFPM is not required to be at the establishment at all times, but must have supervisory authority and provide onsite training for the person in charge and other employees. A person in charge must be present during all hours of food preparation and service.

Is the Always Food Safe certification accepted in Idaho?

Yes. Eastern Idaho Public Health lists Always Food Safe among accepted nationally accredited food protection manager exams. The Always Food Safe exam is accredited by the ANSI National Accreditation Board (ANAB) under Conference for Food Protection standards.

Do I need certification before opening?

In Eastern Idaho Public Health’s district, yes. EIPH requires proof of a certificate from a nationally accredited food safety exam before it conducts a pre-opening inspection. Other districts may handle timing differently, so check with your local health district.

Is the Idaho Food Safety Exam the same as CFPM certification?

No. The Idaho Food Safety Exam is one way a person in charge can demonstrate knowledge, but it is not an accredited food protection manager certification and does not satisfy the CFPM requirement.

The Always Food Safe Food Protection Manager certificate is valid for five years. IDHW notes individual establishments may require more frequent renewal.
