Who Needs Food Manager Certification in Florida?

Florida regulates food establishments through two agencies. Both require certified food managers and both accept ANAB-accredited exams such as Always Food Safe’s.

Restaurants & licensed food service

Florida DBPR — Division of Hotels and Restaurants

  • All managers responsible for the storage, preparation, display or serving of food must pass an approved certification exam.
  • Managers have 30 days after employment to pass the exam.
  • Every licensed establishment needs at least one certified food protection manager responsible for all periods of operation.
  • When four or more employees are handling food at one time, a certified manager must be present.

Schools, facilities & DOH-permitted sites

Florida Department of Health

  • Applies to establishments defined in section 381.0072, F.S., such as certain schools, detention facilities and residential facilities.
  • Sites serving highly susceptible populations, or with three or more food employees at one time, need a certified manager present.
  • Managers must be designated in writing for each location.
  • Certificates are valid 5 years; recertification is by passing the exam again.
