Does Tennessee Require Food Manager Certification?

Tennessee requires a person in charge during all hours of operation, and that person must be able to prove food safety knowledge to the inspector. A Certified Food Protection Manager (CFPM) certificate is the most reliable way to do it.

  • A person in charge must be present during all hours of operation.
  • During inspections, the person in charge must demonstrate knowledge of foodborne illness prevention, HACCP principles and the food rules.
  • They can show this in one of three ways: no priority violations during the inspection, being a certified food protection manager, or answering the inspector’s questions correctly.
